The holiday of Cinco De Mayo, The 5th Of May, commemorates the victory of the Mexican armed forces over the French army at The Battle of Puebla in 1862. In Mexico it's really only celebrated in the Mexican state capital of Pueblo. Mexico's Independence Day is actually September 16th.
The United States has commercialized this holiday so you can drink more Corona and Dos Equis beer. It's an excuse to eat, drink and be Mexican for a day. I love that. If you're fortunate to live in Southern California or other bordering states to Mexico, no doubt you can get a fantastic Margarita and most major cities should have at least one place to get your Margarita on. However, it's cheaper and better with this simple recipe. Try it out with some fish tacos and you will be dancing to the Mariachi music that only you and your date can hear. Also check out this awesome guacamole recipe. If you and your bird love gourmet quesadillas than this mushroom recipe is a must for you.
