The Master Grilling Chart

The key to good grilling, as with lots of things, is good timing....

The below chart is for outdoor cooking on a gas or charcoal grill. Remember Grilling is cooking on high heat as opposed to barbecuing which is an indirect, slow, low heat cooking method. (keep one burner on and put food on opposite end. You may close the lid to make the hot air circulate),

Make sure chicken and most seafood are fully cooked before serving. Pork and lamb should be served until the insides are pink. Red meat can be served in a variety of serving temperatures. (see cooking / serving temperature charts). Cooking times and temperatures may vary according to recipes, cooking conditions or barbecue equipment used.

HIGH = 650F

MEDIUM = 450F

LOW = 300F

Product Heat Setting Time

RED MEAT
   
Hamburgers

1/2 inch to 3/4 inches

Medium

Medium: 7-11 min

Well Done: 10-16 min

1/2 inch Steak (marinate if desired

Medium-hot

Rare: 3-6 min

Med Rare: 7-10 min

Well Done: 10-16 Min

Roasts

Low

Rare: 18-22 min. per lb.

Med: 22-28 min. per lb.

Well done: 28-32 min per lb.

Lamb Chops 1/2 inch to 1 inch

Medium

8-16 min.


PORK

   
Tenderloin

Medium

Cut tenderloin in half (length wise) cook for 10-16 minutes. Turn several times

Chops 1/2 inch to 3/4 inch thick

Medium

Well done: 15-20 min.

Roast 3-5lbs

Medium

Well done: 18-23 min. per lb.

Ribs

Low-Medium

Well done: 45-90 min

Ham Steak nfully cooked

Low-Medium

20 minutes per pound (turn once


POULTRY

   
Chicken Breasts

8-12 minutes turning once. Juices should run clear

Grill 4-6 minutes per 1/2 inch or until fillets easily flake

Fish n Steaks

4-6 minutes per each 1/2Oemarinate before cooking

6-8 minutes. cook until pink
