This is a meal I have cooked for holiday parties. It's delicious. The short ribs were like butter and really easy to do. If this is too much for you, just do the short ribs over mashed potatoes and you will be flying high (but not as high as if you had the pan fried polenta.)

The Meal

THE STARTER
Carrot and Ginger Soup. Made in advance and on the stove when she arrives.

Drink Champagne. It's a perfect pairing!

PASTA COURSE
Store Purchased Mushroom Ravioli with Saffron Cream Sauce (See recipe to make the sauce). Garnish with finely chopped basil and Parmigiano-Reggiano cheese.

Drink a white Burgundy.

MAIN COURSE
Braised Short Ribs in Red Wine, Pomegranate and Orange Sauce over Rounds of Polenta Fried in Truffle Oil. Garnish with finely chopped parsley.

Drink an Amarone or Zinfandel wine.

THE SWEET
Buy a chocolate tart or mousse and save some time.

Drink a Port. I like Graham's Port best.

The Mood

MUSIC TO FEAST BY
Hotel Costes 9 by Stephane Pompougnac. Released in 2006, this is the follow up album to Hotel Costes 8. It's more of the same and may be a bit better. This album is the quintessential dinner date and dinner party music. It's compiled of various artists. Its flavor is electronic yet features sensual songs that are both good at the dinner table and in the bedroom.

SET THE TABLE
Use an informal setting. Meaning napkin folded on the left side of the plate. The soup spoon is resting to the right of the napkin and the dinner fork resting to the right of the soup spoon. (Napkin, soup spoon, fork, plate) The knife is on the right side of the plate, cutting edge towards the plate. The wine glass is by the upper right hand corner of the plate. Have a water glass to the right of the knife.

THE LIGHTING A few small, lit, unscented candles on the table. Keep the lights low, but not too low-- you don't want to appear too creepy.
