Bacon, Thyme and Potato Pie

A simple dish that is wonderful food for the morning after. It takes a while to cook. So enjoy the time you have together and wake up slowly. Drink Suggestion: Bloody Mary.
Time to Make:
50 minutes
Serve with fresh fruit such as sliced strawberries and melon or serve with slices of watermelon and feta cheese.

• 8 slices of bacon
• 1/2 onion coarsely chopped
• 2/3 pound of potatoes, cut into sticks
• 1 tablespoon of dried thyme
• 1 tablespoon of all purpose flour
• 2 eggs
• 5 tablespoons of milk
• 3 tablespoons of unsalted butter
• Salt and Pepper to taste

• 9”-13” Roasting pan
• whisk
• large bowl
• Medium bowl
• Measuring spoons
• Large spoon or spatula
• Fork

1. Preheat the oven to 400º F.
2. Combine bacon and onion in a large bowl. Add potatoes, sprinkle with flour, thyme and mix well.
3. Beat the eggs with a pinch of salt and pepper, stir in the milk and pour into the bacon mixture and stir until combined.
4. Melt butter in a roasting pan. When it turns golden brown, pour in the mixture and then smooth it out with the back of the spoon or spatula.
5. Lightly mark or poke the pie with a fork.
6. Bake for 45 minutes. Slice and serve hot.
