The Tease
So easy to prepare. It takes about 5-10 minutes to cook. SEE THE VIDEO!
The most important thing about cooking scrambled eggs is not to over cook them.

• 3 Eggs

• Nob (1 Tablespoon) of unsalted butter

• 1/2 Tablespoon of crème fraîche

• Little bit of salt & 0epper

• Chopped chives

• Fat cap mushrooms

• Salt & pepper

• Vine tomatoes

• Sour dough bread (thick cut)

• Drizzle olive oil

• Non-stick skillet for the mushrooms and tomatoes

• Small sauce pot for the eggs

• Heat resistant rubber spatula

Preparation (Do it!)
See Video Instruction 1.  Add olive oil to a skillet and heat on medium. Add whole mushrooms and season with salt and pepper.

2. Add tomatoes (keep them on the vine) to the skillet.

3. Cut think slice of bread and toast

4. Add eggs to sauce pot, but do not season. Add nob or Tablespoon of unsalted butter. Turn stove on to medium high heat

5. With spatula whisk egg and butter while heat is on.

6. Continue to take the pot off of the heat and back on the heat ( do this 3 or 4 times) while stirring with the spatula. Keep stirring the eggs like you would a risotto.

7. When the eggs are getting firm and creamy, add the crème fraîche and stir. Season with salt and pepper. Add chopped chives.

8. Add the toast to the plate and drizzle olive oil on the toast. Add the eggs on top of the toast and place the mushrooms and tomatoes on the side.
