You must use American cheese for this recipe. It's the only thing that melts properly and becomes fluid for this recipe.

• 1 1/2 pounds ground beef (between 15% and 20% fat)
• 1/2 teaspoon salt
• 1 teaspoon pepper
• 4 slices American cheese
• 4 buns
• Toppings and condiments of your choosing

• Griddle or cast iron pan

1. Combine beef, salt, and pepper. Mix only long enough to distribute salt and pepper evenly.
2. Divide mixture into 8 even portions.
3. Pat out thin, round beef patties, making them slightly larger than a cheese slice (remember: you need to sandwich the cheese with the meat).
4. Make 4 juicy lucy patties by sandwiching a slice of cheese between two individual patties and then pressing tightly around edges to seal. You don't want any blowouts like above, do you?
5. Cook over a medium-hot grill for 3 to 4 minutes a side.
6. Bun them, condimentize them, and serve them up!
