Sensual Mediterranean Salmon

The Tease
The simple Mediterranean style marinade (Greek influence) composed of garlic, shallots, lemon juice, olive oil, dry oregano, salt and pepper is a delightful concoction. The yummy parsley mashed potatoes are light and creamy and the beautiful blanched broccoli bursts in your mouth with every bite.

Time To Cook:
• Novice Cook 30 Minutes not including marinade time
• Experienced Cook 15 Minutes not including marinade time
Salmon is a super-sexy, phat fish that is fantastic for your system. Salmon meat contains large levels of omega-3 fatty acids, which are known as one of the best kinds of fat. Omega-3 fatty acids are capable of lowering the risk of heart disease by preventing unhealthy blood clots.

• 2 1/4 - 1/2 pound pieces of fresh salmon

• 3 cloves of minced garlic

• 2 shallots, finely chopped

• The juice of 1 lemon

• Baking or cooking sheet

• Bowl

Preparation (Do it!)
1) Season your fish on both sides with salt and cracked pepper.

2) In a bowl, or using a plastic bag, combine the garlic, shallots, oregano, lemon juice and olive oil. Add the fish. Cover and seal, then refrigerate for half an hour.

3) Take the fish out of the refrigerator and turn on the broiler in your oven. Place the fish on a baking or cooking sheet and cook 5 minutes each side. Your salmon should be slightly pink in the center.

Serve with Parsley Mashed Potatoes and blanched broccoli.
