Naked Quinoa Dressed Pilaf

Quinoa has the most protein of any grain. It’s light, healthy and makes your bowels happy too.

• 1 tablespoon olive oil
• 1 tablespoon unsalted butter
• 1 onion, chopped
• 2 stalks celery, chopped
• 2 carrots, diced
• 1/2 cup quinoa
• 2 cloves of garlic, minced
• 1 cup hot chicken or veggie stock
• Salt and pepper to taste

• Small stock pot
• Medium saute pan
• Measuring cups and spoons

Basically you cook the quinoa like rice…but you add a whole lot of love.
1. Using a strainer, rinse quinoa under cold water. Drain well and put in a small stock pot. Add 1 cup of either chicken or veggie stock, bring to a boil, lower to a simmer and cover for 10-20 minutes. Take off the heat and let sit for 5 minutes.
2. Pour oil into a medium saucepan and place over medium heat. Add onion, celery, and carrots. (This mixture of three ingredients is called a mirapoix.) Cook and stir for 10 minutes, or until vegetables are tender.
3. After the "naked" quinoa is cooked, stir the vegetables into the quinoa. Cook and stir for 1 minute. Season with salt and pepper, eat and enjoy.
