Penne with Sauteed Artichokes

A lovely pasta for this who don't eat meat! Serve this tasty dish "family" style with a salad and bread and you and your gal will be in heaven.

• 3 tablespoons of olive oil
• 1 garlic clove, minced
• 1 tablespoon of fresh flat leaf parsley, minced
• 1 small brown onion, chopped
• 1 jar or can of artichoke hearts
• 2 cups of dried penne
• Half the juice of lemon
• Salt and pepper to taste
• Freshly grated Parmesan cheese to garnish

• Medium stock pot
• Medium saute pan
• Strainer
• Serving bowl or dish
• Measuring cups and spoons

1. Heat the oil in a pan, add onion, and cook for 5 minutes over medium heat.
2. Add garlic and parsley and cook over low heat for 2 minutes.
3. Drain the artichokes and add to the pan. Add the lemon juice and mix well.
4. Cover and cook over low heat for a few minutes.
5. Meanwhile, cook the penne in salted water in the stock pot boiling to al dente. Go to HOW TO COOK PASTA BASICS.
6. Drain the pasta and put it in a serving dish.
7. Pour the artichoke sauce, which should not be too runny, over the pasta.
