Lovely classic quiche. It's easy and tasty. Great for picnics!

• 1 Frozen Pastry Crust (thawed)
• Just barely 1 cup of bacon. diced
• 3 eggs
• 1 cup of heavy cream
• 3/4 cup of grated swiss cheese
• Pinch of fresh nutmeg
• salt and pepper to taste

• Large bowl
• Whisk
• Grater

1. Pre-heat oven to 400 F.
2. Prick the base of the thawed pie crust with a fork
3. Cook the bacon in a small non-stick skillet for 5-8 minutes until golden brown, stiring frequently. Drain on paper towels.
4. Whip eggs, cream and nutmeg together in a bowl and season with salt and pepper. Add the cheese
5. Sprinkle the bacon over the base of the pie shell. Pour the mixture over it and bake for about 20 minutes.
