Strawberry Puree

The Tease
This is a very simple and lovely sauce that can be used as a topping or in Champagne as a Strawberry Bellini.

5 minutes: All levels of cooks
The strawberry was a symbol for Venus, the Goddess of Love, because of its heart shape and red color. “Doubtless God could have made a better berry, but doubtless God never did." (Dr. William Butler, 17th century English writer)

• 1 pint of fresh strawberries

• Either sugar or honey to taste (remember you can always add ingredients, but you can't take away!

Note: 1 pint berries will yield about 1 1/2 cups puree.
Frozen berries can be used the same way, thaw for about 15 minutes before processing. Note: 1 pound package of frozen berries will yield about 2 cups puree.

• Blender or food processor

• Bowl

Preparation (Do it!)
1. Wash, dry, and remove stems from berries.

2. Place in food processor or blender.

3. Process until liquid with pulp.

4. If desired or needed, sweeten with sugar or honey.
