Broccoli with Lemon and Extra Virgin Olive Oil

The secret to this side dish is to use the best extra virgin olive oil you can afford.

• 1 head of fresh broccoli florets
• 1/4 cup extra virgin olive oil
• 1/2 the juice of a fresh lemon
• Salt and pepper to taste

1. Boil water In a medium-sized stock pot.
2. Blanch florets by placing them in the boiling water for 2 minutes.
3. Remove broccoli from boiling water and shock by placing into a bowl of ice water.
4. Drain florets. Return them to the stock pot and add the remaining ingredients to taste. Stir gently to mix.
