Lentils with Bacon

This is a simple one pot side dish or even a complete meal. Serves 4
Time to make:
just over 1.5 hours.

• 1 1/3 cups of lentils soaked in cold water
• 1 carrot
• 1 celery stalk
• 3 1/2 OZ bacon in a single slice
• 1 garlic clove
• 1 onion
• Salt and pepper to taste

1. Put the lentils into a pan, add water to cover, and the carrot and celery and bring to a boil.
2. Add the bacon, garlic and onion, lower heat, cover and simmer for about 1.5 hours. Remove and discard the vegetables.
3. Remove the bacon, cut it into strips and return to the pan. Season with salt and pepper to taste. This side dish may also be served as a fairly thick soup
