Yes, you shouldn't go blind if you eat your carrots. But carrots have many other exciting health benefits, such as helping to lower cholesterol and preventing heart attacks and cancer. A single carrot will supply all of your vitamin A for the day, which affects the formation and maintenance of skin, mucous membranes, bones, teeth, vision and reproduction.

• 4 carrots, sliced into wheels (or 1 small package of mini-carrot sticks)

• 1 tablespoon butter

• 2 tablespoons freshly squeezed orange juice

• 1 tablespoon honey

• Salt and pepper

• Saute pan

Preparation (Do it!)
1) Sauté sliced carrots in butter over medium heat until soft, about 5-7 minutes.

2) Add orange juice and honey to the sauté pan. Heat until sauce has a syrupy texture.

3) Salt and pepper to taste and serve.
