Wild mushrooms can be fun or dangerous, but crimini, a type of button mushroom, are great antioxidants.

• 6 small portobello mushrooms
• 1/2 cup ricotta cheese
• 3 shallots, minced
• 6 slices of hard salami diced
• 2 cloves of minced garlic
• 1 tablespoon of minced, hot cherry peppers in brine
• 1/4 cup white wine
• 1/2 the juice of a lime
• 3 slices of provolone cheese (cut into circles - easy method explained below)
• 1 tablespoon butter
• 1 tablespoon extra virgin olive oil
• 1 tablespoon chopped Italian parsley (fresh)
• 1 tablespoon dried oregano
• 1 tablespoon dried basil
• 2 tablespoons grated parmesan cheese

• Sauté pan
• Baking sheet
• Mixing bowl
• Spatula

1) Pre-heat oven to 350 degrees.
2) Heat your sauté pan over medium high and add a dash of extra virgin olive oil. Sauté chopped salami until slightly brown. Transfer to your mixing bowl.
3) In the same pan add olive oil and butter. Sauté garlic for a minute, then add the shallots. Cook until lucid and add the wine. Add the peppers and cook for a minute. Transfer the mixture to the bowl and add the ricotta, parmesan cheese and the parsley. Season to taste.
4) Take the stems off of the mushrooms and set aside.
Grease your baking sheet with butter.
5) Take a spoonful of the stuffing mixture and fill the center of each mushroom. Bake in oven for 20 minutes at 350º.
6) Take the mushrooms out of the oven and turn on the broiler. Dribble white wine over the mushrooms.
Using the rim of a shot glass, cut out six circles from the provolone cheese and place one on top of each mushroom. Put tray under broiler for a minute or until the cheese bubbles. Sprinkle with dried herbs and serve.
