This is one of the best salads. I have served this for dates and at dinner parties numerous times. It's a winner! .

Spinach, basil and proscuitto are a fantastic three-some!
|

 |
• 1 Bunch of spinach, trimmed and chopped
• 1 Bunch of basil, trimmed and chopped
• 1/4 Cup of extra virgin olive oil
• 1 Clove garlic, peeled and minced
• 2 Ounces of pecans
• 2 Ounces of prosciutto, minced
• 2 Tablespoons of balsamic vineger
• 2 Tablespoons of Dijon mustard
• 1/2 Lemon juice and zest
• 1/4 Cup of Parmesan cheese, grated
• Salt and pepper to taste.

• Saute pan
• Zester
• Cutting Boards
• Measuring spoons and cups

1. Toss spinach and basil leaves (make sure you wash and dry the spinach and basil well before this step.)
2. Heat oil slightly in saute pan. Add garlic and pecans and saute until golden brown.
3. Stir in proscuitto, pepper, mustard, lemon juice, and balsamic vinegar. Simmer 1 minute and remove from heat.
4. Toss salad with warm dressing. Add Parmesan and lemon zest and salt if needed.
